Strawberry Protein Muffin Recipe w/PVL

Strawberry Protein Muffins Recipe

Prep Time: 10 - 15 minutes
Cook Time: 18–23 minutes
Makes: 12–18 muffins
Ingredients
- 2 ripe bananas, mashed (1 if you want less of a "banana taste"
- 2 eggs
- 1/4 cup maple syrup or honey
- 1/4 cup plain Greek yogurt (or dairy-free yogurt)
- 1 tsp vanilla extract
- 1 cup oat flour (or blended rolled oats)
- 1/2 cup PVL Strawberry Protein Powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- 1/2 cup chopped strawberries (fresh or frozen)
- Optional: 2 tbsp mini white chocolate chips or shredded coconut
Instructions
1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.
2. In a large bowl, mash the bananas until smooth.
3. Add eggs, maple syrup, yogurt, and vanilla. Whisk or stir to combine.
4. Add oat flour, PVL protein powder, baking powder, baking soda, and salt. Mix gently until just combined.
5. Fold in chopped strawberries (and any optional add-ins) using a spatula.
6. Scoop the batter into muffin cups, filling about ¾ full.
7. Bake for 18–23 minutes or until a toothpick comes out clean.
8. Let cool for 5–10 minutes and enjoy! Store in the fridge for up to 5 days, or freeze for longer.
What Does “Fold In” Mean?
When a recipe says to “fold in” ingredients, it means gently mixing them in without stirring aggressively. You’re using a spatula or spoon to lift and turn the batter, helping to keep it light and airy. This step is key when adding fruit like strawberries to avoid breaking them apart or overmixing the batter.
